Sullivan Steak and Veggies

A massive part of any athlete's development is nutrition so it's important to eat the right foods to properly fuel your body. But it could be intimidating to know where to start or even what ingredients to pick up at the store which is why we asked Coach Ryan to put together a simple dinner that any athlete or parent could prepare to help get the best from our bodies:



Ingredients:

  • 12 oz NY Strip Steak

  • 1 tsp Olive Oil

  • Sweet potatoes w/ salt, pepper, cinnamon tsp oil oil

  • Broccoli, cauliflower, carrots w/ salt, pepper, garlic, and onion powder tsp olive oil


Instructions:

  1. Cut the potatoes, then toss the cubes with oil and seasonings and then transfer them to a large roasting pan and cook at 425 degrees Fahrenheit. Toss the sweet potatoes every 10-15 minutes to prevent them from burning and to get an even cook and caramelization.

  2. In a large bowl, combine the broccoli, cauliflower, and carrots with oil and seasonings. Transfer to a large roasting pan and roast for 35 to 40 minutes in the 475 degrees Fahrenheit preheated oven, stirring every 10 minutes, or until vegetables are cooked through and browned.

  3. Heat your grill to high. Brush the steaks on both sides with oil and season liberally with salt and pepper. Place the steaks on the grill and cook until golden brown and slightly charred, 4 to 5 minutes. Turn the steaks over and continue to grill 3 to 5 minutes for medium-rare (an internal temperature of 135 degrees F), 5 to 7 minutes for medium (140 degrees F), or 8 to 10 minutes for medium-well (150 degrees F). Let steaks rest for 5 minutes.

  4. Serve and enjoy!
