Sullivan Steak and Taters

A massive part of any athlete's development is nutrition so it's important to eat the right foods to properly fuel your body and after his last dinner recipe was a huge success we asked Coach Ryan to put together another simple dinner that any athlete or parent could prepare to help get the best from our bodies:



Ingredients:

  • 12 oz Top Sirloin

  • 1 tsp Olive Oil

  • Potatoes w/ salt and pepper

  • Asparagus

  • Parmesan cheese

  • Garlic


Instructions:

  1. Cut the potatoes, then toss the cubes with oil and seasonings and then transfer them to a large roasting pan and cook at 425 degrees Fahrenheit. Toss the potatoes every 10-15 minutes to prevent them from burning and to get an even cook and caramelization.

  2. Place the asparagus into a mixing bowl, and drizzle with olive oil. Toss to coat the spears, then sprinkle with parmesan cheese, garlic, salt, and pepper. Arrange the asparagus onto a baking sheet in a single layer and place it in the preheated oven for 12 - 15 minutes.

  3. Heat your grill to high. Brush the steaks on both sides with oil and season liberally with salt and pepper. Place the steaks on the grill and cook until golden brown and slightly charred, 4 to 5 minutes. Turn the steaks over and continue to grill 3 to 5 minutes for medium-rare (an internal temperature of 135 degrees F), 5 to 7 minutes for medium (140 degrees F), or 8 to 10 minutes for medium-well (150 degrees F). Let steaks rest for 5 minutes.

  4. Serve and enjoy!
